This walkthrough for Chapter 12 in Resident Evil 4 Remake will guide you through all objectives. This also includes Collectibles, Trophies and Key Items.

Chapter 12
Make your way to the surface
Key Item: Luis’s Key
Automatically obtained during cutscene at start of chapter, unmissable.
You’ll then need to keep following the path ahead and take the elevator to make your way back to the castle. Note that this is the final chapter you are here, so you need to make sure you grab any items in the castle before progressing (this will be pointed out later as well).
Key Item: Small Key
At the top of the elevator, you’ll be in the room north of the ballroom you couldn’t previously enter, with a gondalo that leads to the clocktower. This is what you do to progress the story, but you first need to clean up the remaining collectibles in the castle. On the railing to the right of the gondalo you can find the final Small Key of the castle.
Merchant Request: Jewel Thief
Now in the same area, this request is on the wall next to elevator / merchant. You must find and sell the scratched emerald from a crow’s nest, will be listed below when we get there. Note though that if you picked this up earlier in the game the request won’t be here.
Merchant Request: The Disgrace of the Salazar Family
Same wall as the other Merchant Request. You must deface a portrait, which will be shown below. We’ll backtrack to the Throne Room next, where we will find the portrait.
Treasure: Gold Chicken Egg
Go through the door opposite the Gondola (don’t go on Gondola yet). Then backtrack to the Throne Room in the east of the map. There you can use the Cubic Device on the right side of the room to obtain a Gold Chicken Egg.
Ramón’s Painting (for Merchant Request “The Disgrace of the Salazar Family”)
In the same room, in the corner left of the throne. The small painting on the side wall is the one of Ramon. Open your inventory, click on the golden egg that you got from the previous treasure, select “Equip” (DON’T “USE” IT), then throw the egg against the painting. If you throw it at the wrong painting pause the game and select “Quit Game” and “Continue” to respawn before the room, then you can recollect the treasure and retry. If you had kept a normal chicken egg in your inventory from earlier in the game you can also throw that instead, saving the gold egg to sell to the merchant.
Stolen Jewel (for Merchant Request “Jewel Thief”)
Now backtrack all the way to the Courtyard, and exit the gate on the west side. Look north in the direction where a merchant/typewriter room is. Here you can shoot down a crow’s nest, then loot the Scratched Emerald from it and sell it to the merchant.
Treasure: Ornate Beetle
Now for the final item in the castle, backtrack to the battlements through the path in the courtyard (where you found Ashley at the end of chapter 8). Where the giant fell through the floor there is a small path to the right you can use to get back to the tower, so you don’t need to go all the way around. On the bottom floor of this tower is a locked drawer you can use your Small Key on to obtain an Ornate Beetle.
When you’ve collected all remaining items and are ready to leave, head back to the gondola and take it across to the clock tower, then head inside.
Objective: Get to the top of the clock tower
(Note: for one of the upcoming trophies “Capacity Compliance” you will have to defeat a lot of enemies quickly. Bringing a fully upgraded TMP with about 200 ammo is HIGHLY recommended here to make it much easier. Equip it before advancing to the clocktower but save the ammo until you reach the trophy, which will be listed below).
Castellan 12
After entering the clock tower before going anywhere, go to the left into the northwest corner of the room, sitting on a box you can find the Castellan.
Treasure: Gold Bar
Now walk directly south into the area just behind the stacked items. At the end, you can find a chest containing a Gold Bar.
Treasure: Alexandrite
You can now deal with the enemies and start making your way up the stairs. When you reach the second landing don’t take the path through the center yet, go past to the block stairwell and you can find a metal cage hanging from the ceiling. Shoot it down to obtain an Alexandrite.
You can now start making your way further up the clock tower. In the next two sections where you are avoiding the fire-breathing statue wait for it to move towards you and stop, then run across the path so that the fire is moving behind you.
Continue up the tower when you reach the next part of the stairs. When you move toward the group of enemies you’ll be shown a scene with one higher up dropping a metal ball down the stairs. You’ll need to keep making your way up while avoiding these balls by moving into the inset sections off the stairs like below.
When you reach the top deal with the enemy on the lever, then pull it yourself. A number of enemies will have appeared down the stairs to come up to you, but pulling the lever drops another ball on them. You can run back down the stairs and pick up a bunch of items they dropped as well.
Treasure: Mirror with Pearls & Rubies
Now on the same spot as the lever, go to the right of the spot you drop down and you can walk past a broken stone railing. On this platform is a chest containing a Mirror with Pearls & Rubies.
Treasure: Extravagant Clock
You can now drop down to the lower area and there is a chest near the stairs that contains an Extravagant Clock.
NOTE: Pulling the lever on the lift triggers a Point of No Return (elevator ride), after which you can no longer free-roam the Castle. Make sure you have collected everything in this area first.
Trophy: Capacity Compliance
When you are ready, pull the lever to activate the elevator, don’t let any enemies jump onto the elevator. The elevator isn’t allowed to stop, which occurs if an enemy is on it for longer than a second. If an enemy jumps onto it and you hear Leon comment on the elevator stopping, pause the game immediately, click “Load Game” and load the last Autosave to be put back right before the elevator (though depending on when the autosave occurred you may need to pick up the treasure items again). At the top head out the door to the front of the clock and continue on the path.
Go After Ashley
Treasure: Yellow Diamond
Along the path, you’ll reach some wooden boards which you need to slowly crouch across. After the first set look up to the left where you can spot a hanging cage. Shoot it to collect a Yellow Diamond. If you had collected all treasure in the castle you’ll now earn the trophy/achievement Raider .
You can head into the door on the left of the path for the final Merchant of the chapter. Get prepared for a fight, then head down the path ahead and enter the next building.
Defeat Ramón
You’ll now be fighting Ramón Salazar in a transformed state. He basically floats around the room with his tentacles, then will either shoot goo at you, drop goo on the ground that explodes when you go near, or try to slam into you. Most of the attacks can be avoided by keeping part of the arena structure in between you and him when he is about to attack, which is telegraphed pretty hard by him stopping in place for a moment and facing you. You primarily damage him by shooting his human body in the mouth, or meleeing him when he falls to the ground.
Trophy: You Talk Too Much! (Throw a grenade into Ramón Salazar’s mouth)
During the fight for this trophy, you need to throw a grenade directly into his “mouth” (meaning hit his human body). If done correctly the grenade will explode immediately instead of falling out. If you run out of grenades during the fight you can reload the last autosave to keep retrying until you get it. A good opportunity is when he sticks to the ceiling to spray you with black ooze, as he stays in that spot for an extended period of time.
Key Item: Lip Rouge
Once Ramon is defeated, make sure to pick up the Lip Rouge from his body. Like Mendez’s eye this doesn’t count for treasure, but sells for a nice price when you next get to a merchant.
Go After Ashley
You can then take the new path out of the room. There’s no more specific items to pick up, but there are some supplies along the way you can grab. When you reach the boat house at the end, interact with the boat to complete the chapter.
This finishes Chapter 12 in Resident Evil 4 Remake.

When it comes time to deface the portrait of Ramon, I found that it was not necessary to use the golden egg, nor was it necessary to hang onto an egg from any earlier chapter–on Standard difficulty, at least, there are chickens clucking around near the throne, and one of them eventually produced a brown egg that got the job done.

Throwing an egg will cancel out Finish New Game Plus using only Pistols/Knives run! Found out the hard way!
