For trophies & achievements, you need around 90% game completion. The only collectibles you don’t need at all are Lore Items and Outfits. Of everything else you need all. There are no missable collectibles. You can get everything after the story, there is still free-roam. Even though the game warns of a Point of No Return before the final boss, this only locks you into the rest of the story temporarily, afterward you can still freely explore the world and do all collectibles and side quests.
It’s recommended to finish the story first, so that have every ability unlocked. For many collectibles there are story-related abilities required. On the first visit some collectibles will be inaccessible. Just grab what you can and leave the rest for later.
Collectibles can not be tracked directly. On PS5 however, you can track total progress via the trophy list.
