Pokemon Scarlet & Violet feature 6 Legendary Pokemon in total. 2 of the Legendaries are the version-exclusive Pokemon Koraidon and Miraidon. The remaining 4 legendaries are from finding 4 sets of 8 colored stakes (32 stakes total). These stakes are hidden around the map, they are like treasure hunts. After getting all stakes of one color you can open a shrine where the corresponding legendary Pokemon will appear.
If you accidentally defeat a legendary Pokemon it will respawn in the same place until you catch it. So they can’t be missed by accident. Of the two main legendaries Koraidon and Miraidon there is even a second duplicate to catch in each version, which allows you to trade one to a friend and get their version exclusive in return, while still retaining one copy of the legendary for yourself.
All legendaries are Endgame Pokemon (Level 60+). You also need the climbing ability for your mount before you can get any of them, which is unlocked by defeating False Dragon Titan (Level 55), one of the main story bosses. This is very late in the game.

Then go to the Poco Path Lighthouse in South Province (Area One), where you went during the Prologue at the start of the game (can fly to it). After a cutscene and a fight you can now access the Great Crater of Paldea from its north-west side, through West Province (Area Three), where the purple-colored section is on the map adjacent to the crater.
