Hogwarts Legacy has 13 Beast Locations. Finding all Beasts is required to complete the Collections for Collector’s Edition trophy & achievement. You must also breed 12 of 13 beasts (all except Phoenix) for The Nature of the Beast trophy & achievement.
Beasts get added to the Beasts Collection as soon as you encounter them once. Just being near them is enough. Many will be unlocked automatically from story progress. The Unicorn and Phoenix are part of Side Quests.
In order to breed Beasts you must do Deek’s Side Questline, which is started in Hogwarts > The Room of Requirement, available after Main Quest #22: The Room of Requirement. Do his first two side quests called “The Plight of the House-Elf” & “Foal of the Dead”. During Foal of the Dead you are automatically taught how to breed beasts. After this you can conjure Breeding Pens and put a male and female beast of the same species together to create offspring.
None of the Beasts are missable. You can still find and catch all of them after the story in free-roam. The Side Quests are also still there after the story.

Automatically added to Collection Menu during Main Quest: San Bakar’s Trial, afterward it can also be caught at a single Beast Den in Clagmar Coast, in the very south of the map.
#5 – Hippogriff
Automatic story unlock from Main Quest: Beast Class, after this it also appears at Beast Dens.
#6 – Jobberknoll
Automatically added to Collection Menu during Main Quest: The Elf, The Nab-Sack, and the Loom & caught at Beast Dens.
#7 – Kneazle
Automatically added to Collection Menu during Main Quest: Beast Class & caught at Beast Dens.
#8 – Mooncalf
Automatically added to Collection Menu during Main Quest: The Elf, The Nab-Sack, and the Loom & caught at Beast Dens.
#9 – Niffler
Caught at 6 Beast Dens.
#10 – Puffskein
Automatically added to Collection Menu during Main Quest: Beast Class & caught at Beast Dens.
#11 – Thestral
Caught at 2 Beast Dens.
#12 – Unicorn
From Side Quest: The Unique Unicorn in Hogsmeade. After this side quest a single Beast Den appears north of Hogsmeade where it can be caught.
#13 – Phoenix
From Deek’s Side Quest: Phoenix Rising. You must complete 3 side quests total for Deek: 1. The Plight of the House-Elf > 2. Foal of the Dead > 3. Phoenix Rising. Deek can be found in The Room of Requirement, available after Main Quest #22: The Room of Requirement. To play all his quests you must also have finished Main Quest #28: The Elf, The Nab-Sack, and the Loom. Phoenix is not needed to breed the 12 beasts for The Nature of the Beast trophy / achievement because you can’t breed it. But is needed for all 13 Beasts Collection entries for Collector’s Edition trophy / achievement.

I have bred all the creatues but somehow am still missing one??? Are you not allowed to use named creatures?

I tried to breed Highwing with a female hippogriff but it wouldn’t let me since it said that they had to be released. Had to get a regular male hippogriff to be able to breed with the female one.

I was able to breed all the named creatures including Highwing. But I distinctly remember I was using Sepulchria when I bred Highwing, and I Highwing when I bred Sepulchria. Maybe this has an effect. Also, I haven’t got the Graphorn yet, so I will update here once I got it to see if I’ll get the achievement. I only need the Graphorn.

Found a Unicorn in the forbidden forest before the Hogsmeade side quest, there was only 1 female in the forest at night. Used the dlc female Therastel to breed, it was also available as a mount option in my gear. Didn’t tried Highwing so far.

I used arresto momentum twice instead of leviosa, it felt kinda easier to catch Therastral and the mentioned Unicorn with it.
