Dragon Age The Veilguard contains 4 High Dragons. Defeating all high dragons across northern Thedas unlocks the Bringing Down the Sky trophy & achievement. You can still fight all Dragons from the Point of No Return (in Chapter 11 before Story Quest “When Plans Align”).
You fight all of them as part of quests, 1 is tied to your companion “Emmrich”, and 3 are tied to your companion “Taash”. There are other dragons but the extra ones don’t count as “high dragons” and aren’t needed for the trophy.
All High Dragons
Dragon 1: The Formless One – defeated as part of side quest “Pinnacle of its Kind” – see 
The Unbound. You must first finish Emmrich’s 1st companion quest (started in the Lighthouse after recruiting him automatically in the story). Then you unlock the quest “Pinnacle of its Kind” in Necropolis Halls, do the quest to fight the dragon.
Dragon 2: Fangscorcher – defeated as part of Taash’s fourth companion quest “Slaying the Fangscorcher” (accepted in the Lighthouse by talking to Taash). This dragon is weak to ice damage and resistant to fire.
Dragon 3: Kaltenzahn (Dragon King) – defeated as part of Taash’s fifth companion quest “Lair of the Dragon King” (accepted in the Lighthouse by talking to Taash). This dragon is weak to fire damage and resistant to ice.
Dragon 4: Kataranda the Stormrider – defeated as part of Taash’s quest “Kataranda the Stormrider” (accepted in Lighthouse by reading one of the letters in Taash’s room that has a “!” icon on it)
There is a 5th and 6th dragon but they don’t count towards this trophy. The 5th dragon “Revenant Dragon” is fought at the end of Crossroads region quest “The Heart of Corruption”. The 6th dragon “Mythal’s Retribution” can be fought at the end of the Crossroads quest “Regrets of the Dread Wolf” but this should be avoided as it cancels out 
Clear Minds and Open Hearts and isn’t needed for all dragons anyway. There’s also a story-related dragon fight but you can’t miss it and will automatically have done it by the time you can reach all open world dragons.
